Ceylon Cinnamon

Harvesting Ceylon cinnamon is an art passed down through generations. Farmers carefully prune the branches of the Cinnamomum verum tree, gently scrape away the outer bark, and skillfully peel the delicate inner bark by hand using a small knife. These paper-thin strips are then sun-dried to lock in their natural sweetness before being milled to bring out their full, fragrant flavour.
